Huseby Family Recipes and Reminisces

As we went through Mom’s personal effects after she passed away, we realized how much cooking was part of who she was. From working through high school in her mother’s café to feeding all of us as we grew up to entertaining our friends as teenagers and later cooking for our extended families, cooking was a significant part of her life. Years ago, she had given us a handwritten cookbook, which we referred to many, many times, but she also had dozens of worn-out recipe cards, which she kept in her metal recipe box. We felt that the rest of the family needed to have these recipes as well.

So Dawn and I, with some valuable input from my sisters, decided that the best way to honor Mom and remember her legacy was to collect her favorite recipes and make this collection available to our family and friends. Instead of photocopying her tattered and stained cards, we decided to put them in a form that could easily be passed on to our descendants.

Some of these recipes may not be that spectacular, but they are included for the memories they bring. A good recipe book must also include hints and stories. So we have scattered stories and memories of growing up in the Huseby household. We hope that future generations will have a good time with both the recipes and the stories.

Growing up, our Norwegian heritage and Lutheran faith were the center of who we were as a family. We participated in the Luther League at the Lutheran Church and sang in the choir. This heritage molded us into who we were. While none of us remained members of the Lutheran church, we have renewed our interest in our Norwegian roots.

In addition to the stories, we have included some Norwegian proverbs. While my parents did not necessarily quote these proverbs, they reflected their attitudes and thought patterns. Many of these proverbs are from the stories of Peter Christian Asbjornsen and Jorgen Moe that we read growing up.
